Gonzalo Gout ‘12 is chief operating officer (COO) at Casamata, a collection of hospitality projects anchored in one common objective, to create world class experiences that proudly reflect the Mexican heritage. In addition to his passion for food and beverage service, Gonzalo is a tireless researcher of food cultures of Mexico. A 2012 graduate of The Culinary Institute of America, he has worked with Chef Enrique Olvera on-and-off since 2009. In addition to working on both of the chef’s Phaidon books, he has been involved in numerous Olvera projects: the kitchen and dining room of Pujol, the Condesa DF kitchen, on the production team for Mesamérica, as a manager at Eno, as the opening general manager at Cosme, running Ticuchi as Olvera’s partner, and most recently as a COO and partner in Casamata, the parent company. @casamata
